I'm not a scientist, but I would think things evolve according to need, and survival purposes. For example: Horses can't see what is directly in front of of them, but can see what is in back and to the sides very well. They are flight/prey animals, and equipped to see all around them.

So for the time being, all eyes are as they need to be. JMO
