Ok, it's not dinner, but I'll start...
Oatmeal Chocolate Chip Cookies
1 cup butter (softened)
3/4 cup brown sugar
1/2 cup sugar (or Splenda)
1 egg
1 tsp vanilla
1 1/2 cups wheat flour
1 tsp baking soda
1/2 tsp salt (or a bit less)
1 tsp cinnamon
1/8 tsp nutmeg
2 1/2 to 3 cups oatmeal (3 will make the batter seem very dry; it's ok, but the cookies will be very dense. I like it at about 2 1/2. It's a preference, really.)
1/2 to 3/4 bag semi-sweet *chocolate chips
(When I double this, one bag works fine. When I don't double it, I find the whole bag is too much.)
Mix butter, sugars, egg and vanilla well. Mix dry ingredients very thoroughly and add slowly to the wet mixture. Fold in chocolate chips last.
Bake for 12 minutes at 350.
If you use butter to grease the cookie sheet, these will have a nice, crisp, buttery crunch to them.
* I love Trader Joe's chocolate chips! Nestle chocolate chunks (bigger than the chips) are my 2nd choice.
