Contrary to what you have heard they can not control or know everything. There are many other factors here including environmental & triggers that they know much less about & w/ billions of possibilities may never know....

Lol... no need to know everything, just the important stuff. Just like i'm sure cars have poisoned a whole bunch of butterflies or something... Well, ok, too bad for the butterflies, but is unless those hugely important for agriculture, benefits of fast transport outweigh the butterflies. And really big harmful things that can do serious damage to us are controlled. (With catalytic converters or low emission technologies)...
It'll be the same with biotech. The benefits of biotech are tremendous. It is the only hope for world agriculture if we are to feed 10+ billion humans. There may be some risks that we don't see yet, but when oil becomes too expensive to use for food production, we simply don't have viable alternatives.
