And I just thought of another choice that's going to sound a tad weird. Rosemary. It is very hardy, smells wonderful, and it can be "shaped" by pruning. Just this week I saw a Rosemary Christmas tree! It was so cute...about 2' high. It's also a pretty green, and oldtimers always planted it by the entranceway to ward off evil.
