It's actually not that hard to explain. They will simply say that the woman who was pregnant died shortly after due to complications at which point Kate took it upon herself as the only surviving woman to take the child.

Also don't forget that everything Jack said was a lie. The part about 8 survivors and two dying is a story the six were told to tell. That's why Kate said I have heard you tell that story so many times I'm starting to think you actually believe it.
