I've modified to this banana loaf bread which is really easy and pretty healthy.

Banana Bread

INGREDIENTS
  • 3/4 cups all-purpose flour
  • 3/4 whole wheat flour
  • 1/2 cup raw sugar (refined will work too)
  • 1/4 cup low fat marg
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon (I use more sometimes)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 egg
  • 4 very ripe bananas
  • handful of walnuts (or raisins or other fav nuts)
DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 5x9 inch loaf pan
  2. Mash bananas and add remaining ingredients
  3. Mix well. Pour into loaf pan.
  4. Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes, or until toothpick inserted into center of cake comes out clean.

Apple Nut Cake with Caramel Icing

Oven 350
Bundt or tube pan
Bake 1 hour 15 mins + or -

1 1/3 c. butter, softened
2 c. sugar
3 eggs
3 c. reg. flour
1 tsp. baking soda
2 tsp. ground nutmeg
2 tsp. cinnamon
1 tsp salt
4 c. peeled, chopped Golden Delicious Apples
1 tsp. vanilla
2 c. chopped pecans

Icing:
3/4 c. light brown sugar, packed
3/4 c. butter
1/2 c. evaporated milk

Prepare pan by greasing and coating with flour. In a bowl cream butter with sugar, add eggs, beat well. Add vanilla and spices, mix. Sift flour together with baking soda and salt-set aside. Add apples to butter mix and beat, then add the flour mixture and mix well. Fold in nuts. Pour batter into pan. Bake about 40 mins and check for over browning. If top is getting too brown lay a piece of foil over it tent shaped (don't allow it to touch top) to hold down browning. Finish baking, remove and cool. Icing: melt butter in a double boiler and add sugar, then evap. milk. Cook over low heat, stirring often. Cook until it reaches "softball stage" (240 degrees). Spoon icing over cake and cool.

*This cake is best sliced with a serrated knife because it's *very* tender. Oh man is it good!

Pour Jack Daniel's into large glass filled with ice. Pour coca-cola into the glass. Stir lightly.

I think I'll make a variation of this for lunch:

Italian Style Quinoa

Ingredients:
1/2 cup red wine vinegar
2 teaspoons olive oil
2 cloves garlic -- minced
2 teaspoons freshly ground pepper
1/2 teaspoon salt
2 medium green bell pepper -- chopped
1 cup cucumber -- chopped
1/2 cup kalamata olive -- pitted and sliced
1/2 cup red onion -- chopped
1/2 cup fresh parsley -- chopped
4 cups quinoa -- cooked

Directions:

In glass jar with tight fitting lid, combine vinegar, oil, garlic, ground pepper and salt. Seal and shake well.

In large bowl, combine bell peppers, cucumber, olives, onion and parsley. Mix well. Add vinegar mixture and toss to coat. Add quinoa, stir gently but thoroughly to combine; serve.

YUM! I was gonna give you a rep point for this...but I haven't spread enough love around yet.

Easiest breakfast in the world if you have a cast iron skillet:

Prepare your eggs and ingredients the same way you would an omelette. Pour the eggs into the skillet and let the bottom cook for about three-four minutes. Instead of trying to flip it or make scrambled eggs, if you use cast iron you can put it under the broiler. Let it cook for about five more minutes, check to make sure it's all the way done, then cut it like a pie and enjoy. The eggs should be delightfully fluffy and the texture magnificent.
