- with a variety of veggies (high carb veggies).

However, for the past couple of months I've been eating "clean" meaning chicken, fish and veggies. I love seafood - especially trout. It's been really hard giving up carbs - but I feel so much better.

Steaks require longer cooking times, with onions and mushrooms burning, kinda a hassle. I'd add them first, but i'm not that smart

Rice is good, i used to eat it with milk and sugar. Neat. I only recently learned how to cook fish - you turn the heat down, then it does not burn. Wild stuff. Operators are still making fun of me after that might...

PENNE WITH PROSCIUTTO & VODKA SAUCE

1/4 lb. prosciutto ham, chopped
1 lb. penne pasta
28 oz. can chopped tomatoes
1 tbsp. olive oil
1 tsp. chopped garlic
1 tbsp. parsley flakes
1 tbsp. crushed bay leaves
1 tsp. crushed red pepper
1/4 c. vodka
1 c. heavy cream
1/2 c. Parmesan cheese

1. Saute garlic in olive oil. Add crushed tomatoes, prosciutto, parsley, bay leaves, red pepper, vodka and simmer for about 10 minutes in medium heat.
2. Cook penne and drain.

3. Add heavy cream to sauce and cook for 2 minutes in low heat.

4. Mix penne in sauce and add Parmesan cheese. Mix again. Serve with garlic bread.

Perfect side dish for a bbq


corn and radish salad with jalepenos and lime
Bon Appétit | August 2001


Serve this alongside quesadillas.

Makes 6 servings.


4 cups fresh corn kernels (cut from about 4 ears)
3/4 cup thinly sliced radishes
6 tablespoons chopped fresh cilantro
3 1/2 tablespoons fresh lime juice
3 tablespoons olive oil
2 green onions, chopped
2 tablespoons minced seeded jalapeño chilies

Combine all ingredients in large bowl. Season with salt and pepper. (Can be made 1 day ahead. Refrigerate. Bring to room temperature before serving.)
