Actually Kenneth Miller of Brown University did precisely that during the debate challenge with the creationists.

In effect, the skin is sensitive to light, so an animal knows if it's in the light versus in the dark. But how to get back into the dark or stay in the light? An animal needs to know which way. A curved depression allows for shadow, and when a shadow is cast onto part of this patch of light sensitive the animal knows where the light is coming from. This continues to be refined through natural election, until you get a rouchly spherical cavity with a small opening. Now without a lense it doesn't produce sharp images, but images can still be conveyed [think of a oinhole camera]. At first the animal hasn't evolved the neurology to make use of this image producing effect, but again natural selections favors those which make use of it. Then the selective pressure starts favoring heavily for the development of a lense to produce clarity.

So any creationist who says natural selection can't produce an eye is either ignorant as all hell or an outright liar.
